Single vineyard, hand harvested and certified organic. A dry, textural style of Rosé that is vegan friendly.
Hand harvested in March 2022 from The Last Chance Vineyard (70%) and Redbank Vineyard (30%). The pinot Noir chosen is Clone 6 and 667, which we believe offers the most berry fruit flavour and elegance for the rosé style that Sam most enjoys drinking.
All the grapes were gently de-stemmed at the winery and then the juice was given four to six days on the pigment imbuing pinot skins to soak up the deeper berry colours and aromatics. Once pressed, the juice was then fermented to dry and left on fine lees, 35% French oak and 65% in a stainless-steel tank and left for four months to build texture.
Spring and early summer started off well as temperatures steadily increased and regular rainfall meant soil moisture was high enabling the vines to easily access nutrients, so the vines had strong healthy early growth.
February was cooler than typical though with several cold southerly fronts bringing rain, which slowed veraison and seemed to stall what was at that point heading for an early harvest. Then March was far warmer and actually
surpassed February for heat accumulation - and an early harvest was back on! Harvest 2022 began on the 24/3/22 and finished on the 26/4/22.
It was the year that the region struggled to find workers due to Covid but Viticulturist, Mike Wing’s, close collaboration with local orchardists who all shared their workers, ensured Two Paddocks had a great harvest Crew.
